It has been a week since my last post - a week of having to go back to the original elimination diet. Thayden's behavior was exceptionally bad Tuesday and Wednesday after possibly eating snack at school on Monday afternoon. The snack at school was saltine crackers - sounds innocent enough but those crackers have a lot of crap in them! Gluten and soy are the 2 biggest things it has that we are avoiding with him. So we went back to the basics with full elimination again. Thursday he had a decent day at school but at home there were still tantrums and not listening - things started to get better by the weekend.

Nana (my mom) and Gamma (my grandma) came to visit Thurs - Monday as I had a rare 4 days off in a row! Unfortunately Colorado decided to have a blizzard instead of 70 degree weather that was earlier in the week. Their flight landed right before the snow started - and didn't stop until about 15" later! Beautiful, but basically made us shut-ins on Friday (venturing only to Sam's club to stock up).

Saturday my cousin Shannon and family were able to come up to Denver to go out to celebrate a little as she completed her bachelor's degree! Sunday we went to the Museum of Nature and Science, and then we went back again Monday morning as well before they had to fly back to MN. We had some good non-elimination diet meals as well while poor Thayden ate left overs (again, he is doing a great job with this, although he is needing more encouragement to eat his food this past week.) Saturday's meal below - green beans/peppers, 2 potato gratin (Thayden's version didn't have bread crumbs on top), and macadamia nut crusted tilapia (Thayden had left over chicken.)

Technically Sunday night's food was the best - a salad with avocado, tomatoes, mozzarella cheese, and basil over spinach along with focaccia bread. No pictures though :(. Thayden had avocados, spinach and left overs.
