Wednesday night my aunt, Debbie, had a layover in Denver and ate dinner with us. I was going to make mango chicken, until I remember she was allergic to mangoes (whew, I'm glad I remembered that BEFORE I put it on the chicken!) So we had grilled chicken spinach salad with avocado and quinoa pilaf (diced onions, peppers, green onions, celery, garlic, etc).

Thursday night we had left overs as I needed something fast so I could take Thayden swimming - a reward for his good behavior and adherence to his diet! Tonight Troy made chicken on the grill, green beans, and rice pasta - and rice ice cream. I can't tell you exactly what he has been having for breakfast or lunch but I do know he is eating all his food (which is awesome) AND he continues to get "thumbs up" days at school (definitely the most awesome!). His teacher said today he is so much better in group time in keeping his hands to himself and participating and also on focusing on his projects - whatever they might be. The kid still has plenty of energy and will jump up and down for no reason, and I'm glad we haven't eliminated his spunk - just refocused it. He was so excited to go swimming yesterday and he did a great job, especially since we haven't swam since August. I have no pictures since I had to be in the pool with him and Troy and Sierra stayed home because she got sick (poor baby.)
Tomorrow is the 2 week mark of the diet - which means we are going to start to add foods back in. We haven't decided if we will do it over the weekend, because we'd like the school routine and teachers to help be a judge when we do add foods. The first food is tomatoes. Technically, Thayden doesn't like tomatoes but he does like tomato products. I bought some organic nothing-but-tomatoes, spices, vinegar, agave syrup catchup and nothing-but-tomates-and-spices pasta sauce. Now, it is true we haven't been giving Thayden spices either, so this is technically introducing 2 new things, but we are going for it (since I think neither are going to affect him, my suspicion is it is dairy or gluten, but we'll see.)
