Day 10 (Monday)
Breakfast: mango slices, coconut yogurt, rice cereal and rice milk
Lunch: left over baked chicken and rice, broccoli, asparagus, rice milk
Snack: bowl of fresh berries, applesauce, rice cake with honey
Dinner: chicken stir fry with rice noodles and "carrot noodles" (note: these are just carrots cut up with the peeler, but it makes it more fun), steamed broccoli, almond milk
Dessert: rice ice cream with slices of mango
Thumbs up day at school again today. There are a couple days they didn't have take home sheets last week but it sounds like Thayden has had all good days since starting the diet. His teacher is now on bedrest until she has her baby and then will be on maternity leave, which Thayden told me he was not happy about and tonight he said "I want to go to another school." He just likes Ms. Katie a lot I think ;)
And finally, Thayden is gaining weight! I'm not sure I believe it (so I waited to report it until I could weigh him again today.) 31.8 lbs! That's almost a 1/2 pound weight gain in a week! (for comparison, he has gained maybe 2 pounds in the last year!) Maybe it's a fluke but it is definitely not weight loss which is what I was worried about since all the major fat sources (butter, whole milk & yogurt, cheese, etc) are eliminated.
Day 11 (Tuesday)
Breakfast: rice cake with honey, coconut yogurt with berries
Lunch: left over broccoli with the chicken stir fry, rice milk
Snack: sliced mango and berries, rice chips (not a fan)
Dinner: chicken and asparagus stir fry with almond butter sauce over rice, sweet potato crinkle cuts, almond milk. Dessert - rice ice cream and blueberries
Thayden had another good day. Tomorrow I'm hoping to take him swimming as a reward for doing such a great job on his new diet. :)
