Chronicles of The Elimination diet Part 4

We made it through the first week!  Thayden has been doing a great job :)


Day 8
Breakfast: rice cereal with rice milk x 2 bowls
Lunch:  Chicken burgers on the grill, green beans, and mashed potatoes (with coconut butter)
PM snack:  coconut yogurt with blueberries and a kiwi
Dinner:  eggplant stir fry, quinoa, and asparagus (with a couple bites of left over chicken since he was not a fan of eggplant.)
Dessert: rice ice cream with blueberries and strawberries

I tried to expand our horizons by cooking with eggplant given they were only 99 cents at the store.  I can't use any cheese, bread, or tomatoes (or tomato sauce), so I just sliced them, salted them and tossed them in to stir-fry - and pretty much everyone has requested NOT to have eggplant again.  So much for trying new things.

Day 9
Breakfast: rice cereal with rice milk x 2 bowls
Lunch: chicken, broccoli, and left over mashed potatoes, almond milk
Snack: rice yogurt with blueberries and strawberries and some gluten free granola
Dinner: baked chicken and rice, carrots, steamed broccoli, sliced pears
Thayden's lunch - he ate it all up! (while I slept after an overnight shift)

Thayden was a little more hyper today but he didn't take a nap and it was chilly and windy outside so he was cooped up all day (and I slept most of the day.)  Overall I think the diet is making a difference.   Looking forward to being able to add in other foods, however!

  1. where do you get that coconut yogurt?

  2. Whole Foods. Only the plain coconut yogurt is OK because any yogurts with flavors have citric acid added to them as a natural preservative which is corn-based. Rice yogurt would have worked but they were all fruit or vanilla, no plain. Believe me, it's not an easy task!
